Shrimp Fried Rice
Prep time: 10 Min - Cook time: 15 Min - Total time: 25 Min - Serves 4 - Adapted from Skinnytaste
Ingredients
- 1 lb. large shrimp, peeled and deveined
- 3 cups leftover brown rice cooked
- 2-3 tbsp of kimchi
- 2 large egg whites, beaten
- 1 large whole egg, beaten
- 1/2 medium onion, chopped
- 2 cloves garlic, diced
- 5 medium scallions, chopped, whites and greens separated
- 1 tbsp sesame oil
- 1 tsp crushed red pepper flakes, or more to taste
- 4 tsp soy sauce, or more to taste
- 1 tsp Asian fish sauce, (or more soy sauce)
- 1/2 tsp each of chili powder, paprika and garlic powder
- 1/8 tsp cayenne pepper, or more to taste (optional)
- 1/4 tsp kosher salt
- fresh black pepper, to taste
- oil spray, ghee, olive oil
Instructions
- In a small mixing bowl, add the shrimp, salt, pepper, chili powder, paprika and garlic powder. Mix thoroughly to evenly coat the spices.
- Using a wok, or large sauté pan, turn heat to medium high and add either oil spray, ghee, or olive oil and cook the eggs, when they are done, remove and set them aside.
- Turning the heat to high, add the sesame oil, stir fry around the onions, scallion bottoms, garlic for 1-2 minutes. Add the seasoned shrimp and cook until the shrimp is white and opaque. Add the rice to the skillet and allow it to cook for 2-3 minutes without stirring. Add the kimchi and combine by stirring.
- Add the eggs, soy sauce, fish sauce and cook for an additional 2 minutes. Add the scallion greens and viola - done.

Notes:
Fried Rice dishes are always a hit, they are always quick and always flavorful. You are free to add some diced carrots, peas, or snow peas.
