Roast Beef and Gravy
Prep time: 15 Min - Cook time: 3 Hour - Total time: 3 H & 15 M - Serves 6
Ingredients
- 2 tbsp olive oil
- 1 (3 pound) beef sirloin tip roast, cut into cubes
- 1 medium onion, chopped
- 4 cloves garlic, minced
- 3 cups beef broth
- 1 tbsp salt, plus more to taste
- 1 tsp black pepper
- 1/4 cup all-purpose flour
Instructions
- Heat a Dutch oven over medium heat, then add the oil. Season the roast pieces with salt and pepper, then sear until lightly browned, 3-5 minutes stirring frequently.
- Add the onion and cook for an additional 5 minutes until they begin to soften. Add the garlic, cook for an additional minute.
- Add the beef broth, salt, pepper, and bring to a boil. Reduce the heat to low, cover and simmer for 2-3 hours. You can also at this point, place the Dutch oven into a preheated oven at 275 for 2-3 hours.
- Before serving, mix the 1/4 cup flour with just enough cold water to form a loose slurry, using cold water will prevent lumps - this should be about the consistency of pancake batter, but looser. Stir this mixture into the meat and allow it to boil to produce thickening. Adjust seasonings if needed.
