This
was made for a dear friend who lost her son quite unexpectedly. If you are from the South, you know people make food for such an occasion. Often family will be coming into town, or friends dropping by and this is one dish you don't have to worry about being left at room temperature for more than an hour. It's also great for ANY occasion, it's bright, colorful and full of flavor! This was more than likely inspired from Cooking Classy.

Fruit Salad with Honey Lime Dressing
Servings: 6-8
Prep time: 10
Ingredients
- 1 lb. chopped fresh pineapple,
- 12 oz fresh blueberries
- 12 oz red grapes, sliced into halves
- 4 kiwis, peeled and chopped
- 3 mandarin oranges*
- 2 bananas, sliced (optional)
- Honey Lime Dressing
- 1/4 cup honey
- 2 tsp lime zest (zest of 2 medium limes)
- 1 1/2 Tbsp fresh lime juice
Instructions
- Add the fruit together, leaving the banana out until the last minute.
- In a separate bowl, mix together the honey, lime juice and zest. Pour over the fruit and mix well.
- Cover and refrigerate for 30 minutes to allow flavors to enhance. When ready to serve, slice bananas to individual servings.
