Dirty Brown Rice and Shrimp

Ingredients

 

  • 1 cup brown basmati rice
  • 2 cups chicken broth
  • 1/2 lb lean ground beef (93/7)
  • 1 lb medium shrimp, peeled and deveined
  • 1 onion, diced
  • 2 stalks celery, diced
  • 1 bell pepper, diced
  • 1 clove garlic, minced
  • 2 bay leaves
  • 1/4 tsp cayenne (optional)
  • 1 tsp thyme, divided
  • 1 tsp smoked paprika
  • 2 green onions, chopped
  • 1 tbsp oil

 

Instructions

 

  1. Cook the rice according to package directions, usually 40 minutes and using the chicken broth along with 1 tsp of salt, the paprika and fresh thyme.
  2. At the 20 minute mark of the rice cook, heat a 10-12 inch skillet over medium low heat. Add the oil, green peppers, celery, bay leaf and garlic. Cook for 5 minutes until vegetables begin to soften.
  3. Add the ground beef, pepper, remaining spices and saute until cook through, breaking up the beef as you go, around 10-15 minutes.
  4. Add the shrimp, cover and cook for 5 additional minutes, then add the rice to the dish and toss to combine well. Garnish with the green onion tops.

Notes:

 

What a wonderful flavor this dish has, and well, shrimp. It's always about the shrimp. While this dish is not particularly quick, it's worth the wait.  Someday I will try this with a traditional recipe for dirty rice.
