Dirty Brown Rice and Shrimp

Ingredients
- 1 cup brown basmati rice
- 2 cups chicken broth
- 1/2 lb lean ground beef (93/7)
- 1 lb medium shrimp, peeled and deveined
- 1 onion, diced
- 2 stalks celery, diced
- 1 bell pepper, diced
- 1 clove garlic, minced
- 2 bay leaves
- 1/4 tsp cayenne (optional)
- 1 tsp thyme, divided
- 1 tsp smoked paprika
- 2 green onions, chopped
- 1 tbsp oil
Instructions
- Cook the rice according to package directions, usually 40 minutes and using the chicken broth along with 1 tsp of salt, the paprika and fresh thyme.
- At the 20 minute mark of the rice cook, heat a 10-12 inch skillet over medium low heat. Add the oil, green peppers, celery, bay leaf and garlic. Cook for 5 minutes until vegetables begin to soften.
- Add the ground beef, pepper, remaining spices and saute until cook through, breaking up the beef as you go, around 10-15 minutes.
- Add the shrimp, cover and cook for 5 additional minutes, then add the rice to the dish and toss to combine well. Garnish with the green onion tops.

Notes:
What a wonderful flavor this dish has, and well, shrimp. It's always about the shrimp. While this dish is not particularly quick, it's worth the wait. Someday I will try this with a traditional recipe for dirty rice.
