Carrot Cake Overnight Oats
Super easy to make, and makes use of the 10lbs of oatmeal i bought last year at Costco. While I may not have seen what the future held with Covid-19 coming our way, I love oatmeal in general and it's coming in handy now.
Prep time: 5 MCook time: Total time: 5 M
Ingredients:
- 1/2 cup uncooked regular oatmeal, each jar
- 2 tsp chia seeds, for each jar
- 1 carrot shredded, divided into 2 jars
- 1 date per jar, diced
- 1 tbsp shredded coconut per jar
- milk to fill your jar (I used coconut milk which is perfect for this)
- Additional add-ins per taste
- 1/2 tsp cinnamon
- 1/2 tsp nutmeg
- 2 tbsp pecans
- Chopped dried pineapple - or fresh
- Your add in mileage will vary depending on what you have on hand.
Instructions:
How to cook Carrot Cake Overnight Oats
- Layer the top ingredients in a jar, big enough for expansion. These are called working jars, and I believe I got them through Sur Le Table, or Crate and Barrel, I forget which.
- Stir to combine, add your desired add-ins. Fill to the top with milk of your choice and put the lid on - refrigerate overnight.

I actually had no idea my husband would like this - he asked that we have it again and the dry ingredients are sitting out as I type this, so I can make it again. There are all sorts of variations of overnight oatmeal, and this carrot cake version is one we will make often.
