Sloppy Joe Sweet Potatoes

Ingredients

 

  • 4 medium, sweet potatoes, outer skins cleaned well
  • 1/2 lb. lean ground beef, 93/7
  • 1 tsp seasoning salt
  • 1/3 cup chopped carrot
  • 1/3 cup chopped onion
  • 1/3 cup chopped mushroom
  • 2 tbsp red bell pepper, chopped
  • 1 clove garlic, minced
  • 1 tbsp red wine vinegar
  • 1/2 tbsp Worcestershire sauce
  • 2 tsp tomato paste
  • 8 oz can tomato sauce
  • 1/3 cup water
  • OR……
  • Leftover Sloppy Joe meat from sloppy joes

 

Instructions

 

  1. Preheat your oven to 275. Slather the potatoes with salt, pepper, and olive oil. Bake for 2.5 hours. Turn the broiler to high, and watching carefully, scorch the potatoes on the top. Remove from the oven and top with your sloppy joe mixture.
  2. Add the ground beef, carrot, onions, mushroom, bell pepper to a skillet along with the salt and cook, breaking up the ground beef as it cooks.
  3. Add the red wine vinegar and Worcestershire sauce and cook for 4-5 minutes, then add the tomato sauce, paste and water, stir well, cover and cook for 20 minutes until vegetables are

Notes:

 

This recipe is a fusion of Skinnytaste and Smitten Kitchen - combined they take this dish to absolute comfort food in a bowl.  It has the unique ability to be sweet and salty, without either of them overpowering the other.
