Bowtie Stir Fry Pasta with Pinenuts
Prep time: 10 Min - Cook time: 35 Min - Total time: 45 Min
Ingredients
- 2 oz dried bow tie pasta per person
- 1 small head broccoli, separated into very small pieces
- 1 carrots, sliced into coins
- 5-6 cherry tomatoes, halved
- 5-6 radishes, halved
- 1/4 cup pine nuts
- 1 tbsp olive oil
- 1 tbsp butter
- 1/4 cup parmesan cheese, grated
- Salt, pepper to taste
Instructions
- In a medium sized saucepot (2 quart) fill with water, and over high heat, bring to a boil. Add 1/2 tbsp to the water when boiling is reaches, then add the bow tie pasta and stir. Cook for about 10 minutes according to package directions.
- In a non-stick skillet, bring to medium heat. Add the pine nuts and heat for 4-5 minutes until toasty and browned. Watch carefully as it can go from toasted to burned in the blink of an eye. Remove and set aside.
- Add the olive oil to the pan and add the vegetables, stirring often until they are the crisp-ness you desire - obviously shorter for crisper, longer for softer.
- Add the drained bow-tie pasta to the dish when you have reached the veggie stage of your choice. Add 1 tsp of butter and 1/4 cup parmesan cheese, the pine nuts and toss to combine.

Notes:
A quick throw-down for a side dish that you will make over and over and is great for the fridge clean out kind of day.
Obviously you can increase the servings by increasing the vegetables. The ratio of dried pasta to person is 2 oz.
