Strawberry Muffins
Prep time: 15 Min - Cook time: 20 Min- Total time: 35 Min
Ingredients
- 1-1/2 cups flour
- 1 cup whole wheat flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- Wet Ingredients
- 1/2 cup salted butter, melted
- 1/2 cup honey
- 2 tsp vanilla extract
- 1 cup buttermilk
- 1/2 cup plain yogurt
- 2 eggs
- Berries
- 1 cup fresh strawberries, diced
- 1/2 cup strawberry jam
- 2 tsp lemon zest
Instructions
- Mix all of the dry ingredients together into a large mixing bowl, use a whisk to evenly distribute.
- Mix all of the wet ingredients together until smooth.
- For the berries, use a small bowl and mix together, set aside. Combine the wet mix to the dry mix, then gently fold in the berry mix. Fill your muffin tins 3/4 full, then bake 25-30 minutes.

Notes:
Warm, soft, comfortable strawberries, all wrapped up in a cake like package. Smell the comfort.
This is
also a great way to use up leftover jelly, you could really use any kind.
