Fantastic, and a great way to use up leftover jelly, you could really use any kind.
Strawberry Muffins

Ingredients
Dry Ingredients
1-1/2 cups flour
1 cup whole wheat flour
2 tsp baking baking powder
1/2 tsp baking soda
Wet Ingredients
1/2 cup salted butter, melted
1/2 cup honey
2 tsp vanilla extract
1 cup buttermilk
1/2 cup plain yogurt
2 eggs
Berries
1 cup fresh strawberries, diced
1/2 cup strawberry jam
2 tsp lemon zest
Instructions
Mix all of the dry ingredients together into a large mixing bowl, use a whisk to evenly distribute.
Mix all of the wet ingredients together until smooth.
For the berries, use a small bowl and mix together, set aside. Combine the wet mix to the dry mix, then gently fold in the berry mix. Fill your muffin tins 3/4 full, then bake 25-30 minutes.
