Spicy Garlic Shrimp and Rosemary Beans

Ingredients

 

  • 1 lb jumbo shrimp, peeled, deveined
  • 1 tbsp garlic, crushed
  • 1 red chili pepper, finely chopped (optional)
  • 2 tbsp olive oil
  • 1 tbsp parsley, chopped
  • 1 tbsp rosemary, finally chopped
  • 1 15 oz can cannellini beans drained
  • 1/2 cup tomato puree
  • 2 tbsp butter
  • Salt and pepper to taste

 

Instructions

 

  1. Add the shrimp to a bowl with the garlic, chili, salt and olive oil. Toss to combine thoroughly.
  2. In a 10 inch non stick skillet, over medium high heat, add the shrimp and cook until almost done. Add in the herbs and the cannellini beans. Continue cooking for 3-5 minutes.
  3. Stir in the puree and 1/4 cup water. Simmer until the sauce thickens slightly, then add the butter and swirl into the sauce. Taste and adjust seasoning as necessary.

Notes:

 

A fast dinner, and it has shrimp! Is there anything better?  Serve with Warm Bread
