Spicy Garlic Shrimp and Rosemary Beans

Ingredients
- 1 lb jumbo shrimp, peeled, deveined
- 1 tbsp garlic, crushed
- 1 red chili pepper, finely chopped (optional)
- 2 tbsp olive oil
- 1 tbsp parsley, chopped
- 1 tbsp rosemary, finally chopped
- 1 15 oz can cannellini beans drained
- 1/2 cup tomato puree
- 2 tbsp butter
- Salt and pepper to taste
Instructions
- Add the shrimp to a bowl with the garlic, chili, salt and olive oil. Toss to combine thoroughly.
- In a 10 inch non stick skillet, over medium high heat, add the shrimp and cook until almost done. Add in the herbs and the cannellini beans. Continue cooking for 3-5 minutes.
- Stir in the puree and 1/4 cup water. Simmer until the sauce thickens slightly, then add the butter and swirl into the sauce. Taste and adjust seasoning as necessary.
