Frittata with Basil, Spinach, Tomatoes and Mozzarella

 

Prep time: 5 Min - Cook time: 20 Min - Total time: 25 Min

 

 

Ingredients

 

  • 2 eggs per person, 1 yolk removed
  • butter for the pan
  • 1 small handful of spinach
  • mozzarella balls
  • 1 tbsp parmesan cheese
  • 1/2 cup cherry tomatoes, halved
  • 1 clove garlic, minced
  • Splash of half and half, or cream
  • Salt and Pepper to taste

 

Instructions

 

  1. Prepare all of your ingredients and set your oven to broil.
  2. Back at the cook top, melt the butter in an oven proof pan (carbon steel is my choice here). When the butter is starting to brown, add the garlic and tomatoes., sauté for 3 minutes.
  3. Add the spinach (and mushrooms if using) and get the spinach to the wilt stage.
  4. Pour the egg mixture over your spinach and tomato mixture, and allow this to cook for 1-3 minutes until you see the egg is starting to become opaque on the bottom and a firm egg set is taking place.
  5. Sprinkle the mixture with the parmesan cheese and place under the broiler, keeping a good eye on it. The mixture should puff up and begin to brown shortly. Allow the dish to become fully browned, especially in the center so you are sure it is cooked thoroughly.

Notes:

 

20 minutes to a fantastic protein filled breakfast, that is as good for you as it looks good. Add some sliced avocados, or maybe some toast. Boom!
