Chicken Gyros
Prep time: 15 Min - Cook time: 17 Min - Total time: 32 Min
Ingredients
- 1/3 cup full-fat plain Greek yogurt
- 1/4 cup extra virgin olive oil
- 1 1/2 pounds boneless skinless chicken breasts or thighs, cubed
- 1/4 cup fresh lemon juice
- 6 garlic cloves, chopped
- 2 shallots, chopped
- 1 tbsp smoked paprika
- 1 tbsp chopped fresh oregano
- red pepper flakes
- Kosher salt and black pepper
- 6 fresh pitas or naan warmed,
- pickled red onion, lettuce, dill, and parsley for serving
- Feta Tzatziki
- 8 ounces feta cheese
- 1/4cup + 1/3 cup plain Greek yogurt
- 2 cloves garlic grated
- juice from 1 lemon
- 1-2 Persian cucumbers, shredded
- kosher salt
Instructions
- Make Tzatziki first
- In a bowl, combine all the ingredients, stir well to combine. Marinate for at least 15 minutes at room temperature, then refrigerate until ready to use.
- Preheat the oven to 425. Using a parchment lined baking sheet, place the chicken on the sheet and baked for 10-15 minutes until cooked through. Switch the oven to broil, then broil 2-3 minutes until the edges are browning.
- To assemble, using a naan bread (fresh or storebought) spread the sauce, add some lettuce and the chicken.
- Serve also with thinly sliced red onions and garnish with fresh parsley or oregano, or dill.
Serve with some air fried sweet potatoes to finish off the flavor bomb.
