Fried Goat Cheese should be considered a delicacy, it's just that good.

Fried Goat Cheese

Ingredients

2 cups pretzels (or panko bread crumbs)
salt and pepper for the panko version NOT the pretzel version

1/2 cup flour

2 whole eggs

2 packages goat cheese

Oil for frying

 

Instructions

Stick the goat cheese into your freezer for 10 -15 minutes to firm up for slicing while you prepare the pretzels and the egg wash.

 

If using panko, you can skip ahead, otherwise, using a food processor grind up the pretzels very fine. 

 

Slice the goat cheese into equal pieces, about 1/4 in chick.  Dredge in the flour, then dip in the egg wash, then press into the crushed pretzels.  Repeat with all the slices.  Pop the goat cheese discs into the freezer for 10 minutes.  Do not skip the freezer rest!!

 

Using a medium sized shallow skillet, heat 1/2 inch olive oil over medium heat until a toothpick bubbles so you know the oil is ready to fry.  Add 2-3 goat cheese discs at a time, fry on one side for 30-45 seconds, then turn and do the other side.  Remove to a paper towel lined plate.
