Oatmeal with Bananas, Pecans, and Brown Sugar

Ingredients:

  • 1 cup rolled oats (old-fashioned oats)
  • 2 cups water or milk (or a combination for creamier texture)
  • Pinch of salt
  • 1-2 ripe bananas, sliced (adjust to your taste)
  • 1/4 cup pecans, roughly chopped (toasted for better flavor)
  • 2-3 tablespoons brown sugar (adjust sweetness to preference)
  • 1/2 teaspoon cinnamon (optional)
  • Maple syrup or honey for drizzling (optional)
  • A splash of milk or cream for serving (optional)

Instructions:

  1. In a medium saucepan, bring the water or milk to a boil. Add a pinch of salt.  Stir in the oats. reduce heat to medium-low and cook, stirring occasionally, for about 5 minutes for a chewier texture or up to 10 minutes for softer oats.   If using milk, you might need to stir more to prevent sticking.
  2. While the oats are cooking, you can toast the pecans in a dry skillet over medium heat for a few minutes until they're fragrant and slightly darkened. Keep an eye on them as they can burn quickly.
  3. Slice the bananas. You can either add them to the oatmeal in the last minute of cooking for a softer banana texture or keep them raw for a fresher taste.
  4. Once the oats are cooked to your liking, remove from heat.   Stir in the brown sugar and cinnamon if using, allowing it to melt into the oatmeal.
