A true southern classic - I learned to love this in South Carolina because it's big there, and they have a version that's SPICY!  yumm

Pimento Cheese

1 4 oz jar pimento, diced and drained
2 cups shredded cheddar cheese, extra sharp

8 ounces cream cheese, softened

1/2 cup mayonnaise

1 jalapeño pepper, seeded and minced

1/4 tsp garlic powder

1/4 tsp cayenne pepper

1/4 tsp onion powder

Salt and pepper


Place Cheddar cheese, cream cheese, mayonnaise, pimento, minced jalapeño, garlic powder, cayenne pepper, and onion powder in a large bowl. Mix until thoroughly combined. Season to taste with salt and black pepper
