Shrimp Da Fravilo

Ingredients

  • 1 pound large shrimp, peeled, deveined
  • 1 lb. fresh fettuccini
  • 3 tbsp olive oil
  • 1 tbsp butter
  • 3 garlic cloves, chopped fine
  • 1 medium onion, diced
  • 1 can diced tomatoes
  • 1 cup white wine
  • 1 tsp dried oregano
  • 1 tbsp fresh parsley
  • 3 tbsp fresh basil leaves, sliced (chiffonade)

Instructions

  1. Clean, peel, and devein the shrimp and rinse several times until the water runs clear.
  2. Place the shrimp in a medium sized bowl with salt and pepper and the red pepper flakes.
  3. Heat a skillet over medium high heat using 1 tbsp olive oil and 1 tbsp butter.  Add the shrimp, and sauté for about 3 minutes.
  4. Add the onion, and continue to cook for an additional 5 minutes until translucent.  Add the oregano and garlic and heat through for about 1 minute to allow the spices to bloom and add flavor and fragrance.  Add the wine and enjoy that sizzle, and allow to cook for about 2 minutes for the alcohol to burn off. 
  5. Add the tomatoes, and simmer until the sauce thickens slightly.  Adjust for salt and pepper as desire
