Orecchiette With Cauliflower And Pine Nuts

  • 24 oz cauliflower, trimmed, and roughly chopped
  • 1⁄2 cup pine nuts
  • 1⁄4 cup extra virgin olive oil
  • 2 cloves garlic, chopped
  • 1⁄4 cup oregano leaves
  • 2 tablespoons finely grated lemon rind
  • 1 teaspoon dried chili flakes
  • sea salt and cracked black pepper
  • 14 oz orecchiette
  • grated Parmesan or Pecorino, to serve


  1. Pulse the cauliflower and the pine nuts into a food processor until chopped, but not finely.
  2. Add the oil and butter to the saute pan, and bring to heat on a medium flame.  Add the cauliflower mixture, the seasonings and cook for about 15 minutes.
  3. While this is cooking, cook the pasta 8-10 minutes until done, then drain.
  4. Toss the two mixtures together and serve.
